I. Introduction- Food in Elizabethan England was very different than the food we eat today. For one thing, they ate a lot! They had strange recipies, like Hedgehog, and they ate strange food, but what they ate the most was meat. They loved meat, it was even a sign of wealth. They called somethings meat what we don’t today, like cheese. They also had a lot of things introduced to them by Sir Walter Raligh.
II. Body A. Diet 1. “Meat” a. The general word for solid food was meat. b. Meat was considered a sign of wealth 2. Diet a. Those who could afford it ate mostly animal flesh b. The English relied on meat to a great a lot compared to the French and Spanish c. Diet was mostly consisted of bread, meat, and ale d. Depending on wealth and social class, other foods were available for consuming and enjoying 3. What they ate a. Breads that were eaten were wheat, white, rye and barley b. Some of the vegetables they ate were beans, turnips, greens, parsnips, carrots, cabbage, colewart, beetroot, and salsify. c. Some Fruits that were eaten were oranges, cherries, rasberries, strawberries, mulberries, peaches, apricots, and cornels. d. Some fowl that were eaten were crane, bitter, swan, brant, lark, plover, quail, teal, and widgen e. Some meats that were eaten were beef, mutton, lamb, veal, kid, port, coney, and pig f. Some fish that were eaten were salmon, pike, trout, and carp. g. Some sweets that were eaten were custard, jellies, eringoes, comfits, suckets, codinac, marmalade, cakes, and pastries. 4. Sugar a. sugar was slowly being introduced to and used by the Elizabethans. b. Oueen Elizabeth’s teeth were black and rotten with decay from the sugar. 5. The People a. most of the poor person’s diet was dairy products because they couldn’t afford meat. b. Poor People’s diet largely consisted of bread, fish, cheese, and ale. c. Leftovers were given to servants, then they were given to the beggars. d. Rich People’s diet was mainly lots of meat, fowl, and fish 6. Meals a. Meat was usually seasoned with a cariety of spices and served in rich sauces. b. An average meal of a well off family may include beef, pork, lamb, mutton (flesh of a fully grown sheep), calf, deer, and rabbit at the same time 7. Preserving and Spoiled Meat a. during the fall animals were slaughtered and their flesh was preserved either by salting or smoking. b. Meat was often smoked in a attempt to preserve it. c. Salt, spice, and sugar helped disguise the tast of rotting meat. d. Sauces were also used to cover the fact that the meat had begun to spoil e. Some techniques for preparing spoiled meat were vinegar, burying sauces and spices 8. Eating a. The French called the English soldiers “beef eaters” because they ate more meat than the French, that name is still used today to refer to the royal gards at the tower of London. b. The English are known for eating too much just like the Germans are known for drinking too much. 9. Vegetables a. a meal with vegetables was considered unhealthy. b. A new vegetable came into use during the Elizabethan Era… the potato.
B. Drinks. 1. Drinks a. drinks, such as beer were frequently consumed at the rate of one gallon per person per day. b. Because the water was polluted and dirty, they preferred beer, ale, and wine. c. The poor could only afford ale to drink, but the rich could afford them all. d. People from every class drank mead, a sweet alcoholic beverage prepared by making use of honey. 2. Beer. a. Beer contained hops that made that made the beer bitter so they added ingreadents to cover up the bitter taste. b. The flavors used to mask the bitter taste were bayberries, long pepper, and orris.
3. Types of Drinks a. Dog Bolter, Tangle Foot and Fursty Ferret were the tradional beers that were easily available to the common man. b. Mad Dog, Angel’s Food, Left Leg, and Dragon’s Milk were the common varieties of ale avaiabale
